PB and YAY; gluten-free fun for all ages!

goodman cinnamon raisinLet me preface this post by saying there’s no wrong way to make a PB & J sandwich.

However, there is a right way.  And it’s with my newly-discovered gluten-free gem: Goodman’s cinnamon raisin bread.

This is the best damn gluten-free cinnamon raisin bread I’ve ever had (and coming from over a decade of sage gluten-free wisdom-gathering, that’s big news).  I’d even venture to say it’s the best damn cinnamon raisin bread – period.

So here’s the best damn pb&j sandwich I ever had.

  1. Goodman's Gluten-Free Cinnamon Raisin Bread
  2. Natural (ie: no chemi-crap) Strawberry Jam
    (I use Rigoni di Asiago's strawberry spread)
  3. Peanut Butter & Co. Crunch Time Peanut Butter ...because why would you use any other brand?
  4. Half banana, sliced
  5. Ground Cinnamon
  1. Defrost two slices of Goodman's cinnamon raisin bread in the oven at about 350 degrees until warm and lightly browned (or just pop in toaster), about 2 minutes
  2. Slather both slices with peanut butter
  3. Layer strawberry jelly on top of each slice
  4. Layer one slice with a blanket of banana wedges
  5. Add a little more jelly on top of the bananas
  6. Dust with cinnamon
  7. Place the other slice on top
  8. You know the rest!

    There is nothing I like more than peanut butter…..well, okay maybe chocolate, but wow does this sound tasty. I need to find this bread and I don’t even have a gluten intolerance.
